Sausage, Egg & Cheese Breakfast Biscuits: A Southern Morning Made Easy

All your breakfast favorites baked into one delicious, grab-and-go biscuit. A little sweet, a little savory, and just right for busy mornings.

If there's one thing I've learned about mornings as a mom, it's that everybody needs to eat, but nobody seems to be on the same schedule!
Between getting the kids dressed, finding missing shoes, packing lunches, and trying to get everyone out the door on time, breakfast can quickly become an afterthought. And while I love a slow morning gathered around the table, most weekdays look a whole lot more like grabbing something on the way out.
That's exactly why I love these Sausage, Egg & Cheese Breakfast Biscuits.
They're everything we love about a good Southern breakfast, all tucked into one easy, handheld bite. Savory breakfast sausage, fluffy eggs, shredded cheese, and just a touch of honey come together to make a biscuit that's hearty, comforting, and a little bit sweet.
And the best part? There's no rolling dough, cutting biscuits, or standing over the stove making breakfast for everyone individually. Just mix everything together, scoop it onto a baking sheet, and let the oven do the work.
Around here, I believe good food doesn't have to be complicated to be meaningful. Sometimes it's a beautiful Sunday supper, and sometimes it's making sure your babies have something homemade to eat before they head out the door.
These biscuits are perfect for both.

Sausage, Egg & Cheese Breakfast Biscuits
Prep Time: 10–15 minutes
Cook Time: 22–25 minutes
Total Time: Approximately 35–40 minutes
Yield: 8–10 biscuits
Perfect For: Busy school mornings, meal prepping, weekend breakfasts, and breakfast on the go
Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 cup shredded cheese
1 cup cooked breakfast sausage
4 eggs
¼ cup honey
Instructions
Preheat your oven. Set your oven to 400°F and line a baking sheet with parchment paper for easy cleanup.
Combine the dry ingredients. In a large mixing bowl, stir together the all-purpose flour and baking soda until evenly combined.
Add the good stuff. Add the shredded cheese, eggs, and honey to the flour mixture. Stir until everything is well incorporated.
Mix in the sausage. Fold in the cooked breakfast sausage, making sure it's evenly distributed throughout the batter.
Scoop your biscuits. Using a large spoon or cookie scoop, portion the mixture into 8–10 biscuits on your prepared baking sheet, leaving a little space between each one.
Bake until golden. Place in the oven and bake for approximately 22–25 minutes, or until the tops are lightly browned and the centers are fully cooked.
Cool and store. Allow the biscuits to cool slightly before serving. Store leftovers in an airtight container in the refrigerator and reheat before enjoying.
Enjoy! Serve warm, grab one on your way out the door, or sit down with a cup of coffee and enjoy a little slower start to your morning.
A Few Tips From My Kitchen
Make them ahead. One of my favorite things about this recipe is how easy it is to prepare a batch in advance. Bake them on Sunday, store them in the refrigerator, and you've got breakfast ready for those mornings when everyone is running in different directions.
Use your favorite sausage. Mild, spicy, or a favorite Southern breakfast sausage all work beautifully. Just be sure to cook and drain the sausage before adding it to the mixture.
Switch up the cheese. Sharp cheddar is a wonderful choice for a rich, savory flavor, but you can use whatever shredded cheese your family loves.
A little honey goes a long way. The honey adds just enough sweetness to balance the savory sausage and cheese. It's that sweet-and-salty combination that makes these biscuits so good.
Make them freezer-friendly. Once completely cooled, wrap the biscuits individually and freeze them in an airtight container or freezer-safe bag. Reheat until warmed through for an easy breakfast whenever you need one.
Because Homemade Doesn't Have to Mean Hard
I think sometimes we imagine homemade breakfasts as big, beautiful spreads with biscuits, eggs, bacon, fresh fruit, and everyone sitting around the table in their pajamas.
And while I absolutely love those mornings, the reality is that life is busy. Some days we're lucky if everyone leaves the house with matching shoes!
But I still love finding little ways to bring homemade goodness into our everyday routines.
These breakfast biscuits are one of those simple recipes that make life just a little easier. They're filling, easy to prepare, and something the whole family can enjoy without making a big mess in the kitchen.
Because feeding the people we love doesn't always have to be elaborate. Sometimes it's as simple as a warm biscuit wrapped in a napkin, handed to a little one on their way out the door.
And I think there's something pretty special about that, too.
